First step- For this you have to take 1 big but raw bottle gourd. Keep in mind that bottle gourd seeds should be completely raw. Now wash, peel the bottle gourd and cut it into pieces like a vegetable. Now put the bottle gourd in a mixer and grind it finely. Bottle gourd itself contains a lot of water, so grind it without water. Keep in mind that the bottle gourd should be finely ground like a paste.
Second step- Take out the ground bottle gourd in a bowl. Add 2 spoons of fresh homemade curd in it. Now add some salt and 1 pinch of sweet soda. Now take half a cup of rice flour and add it slowly and mix. If rice flour is not available then mix half all-purpose flour and half rice flour. Mix everything well.
Third step- Grease a plate and put the prepared batter in it. The color of the batter will turn white and set it smooth on top. Now roughly chop 2 medium onions, roughly chop 2 tomatoes, roughly chop green chili and ginger. Pour half a glass of water in a pan and place a big bowl of vomit in it. Now add chopped onion, tomato, green chilli, dry red chilli and ginger garlic.
Fourth step- Now add 5 black peppers and 1 piece of cinnamon in it. Place the plate with cheese over the bowl, cover it and cook on medium flame for 15 minutes. Check with your hands that the cheese is not sticking to your fingers. If it sticks, cook a little more. Now take out the cheese and also take out all the vegetables.
Fifth step- Now add onion, tomato, green chilli, red chilli, garlic and ginger and grind them finely. When the cheese cools down, cut it into cubes. Now add 3 tablespoons of oil to make the vegetable. Add cumin and Kashmiri red chilli in it. Now add prepared onion tomato paste. Cook it while stirring until oil leaves. After roasting the spices, add 1 tablespoon coriander powder, half teaspoon turmeric, some salt, Kashmiri red chilli.
Sixth step- Add 2 spoons of fresh thick curd to the masala and cook while stirring continuously. When the masala starts releasing oil, add water according to the gravy. You add the same water in which we boiled onion and tomato. Keep cooking the gravy and when it starts boiling, add the prepared paneer in it. Add some garam masala and serve the vegetable with green coriander.
