Bitter gourd vegetable can be made in many ways. Bitter gourd bhujiya or stuffed bitter gourd is prepared in most of the houses. Gram flour, onion and bitter gourd vegetable recipe
First step- First of all, take half a kilo of fresh raw bitter gourd. Lightly peel the bitter gourd and cut it lengthwise from the middle. Now take out the thick and ripe seeds of bitter gourd, apply salt and leave them for half to an hour.
Second step- On the other hand, prepare the masala for the bitter gourd vegetable. Take 1 tablespoon whole coriander, half teaspoon cumin and one teaspoon fennel and grind them coarsely.
Third step- Drain the water from the bitter gourd and wash them twice. Squeeze the bitter gourd with your hands so that the water comes out. Now add mustard oil in the pan and after the oil gets hot, add all the bitter gourds. Keep the gas on high medium and fry the bitter gourd until it becomes slightly crispy. Take out all the bitter gourds.
Fourth step- Now add 1 finely chopped onion in the remaining oil. Add 1 spoon garlic ginger paste in it and fry it. Now add dry spices like half teaspoon turmeric powder, half teaspoon red chilli powder, salt and mix the spices. If you want, you can also add 2 spoons of water.
Fifth step- Now take 10-12 small onions which are called baby onions. Peel the onion and make small cuts in the middle. Put onion in gravy and fry for 2 minutes. Add crushed spices and mix. Add half cup water to it and mix. After it comes to a boil, add half teaspoon garam masala and half teaspoon kasoori methi.
Sixth step- Now add bitter gourd in it also. Mix the vegetables and cook on low to medium flame for 6-7 minutes. Take 2 spoons of gram flour in a pan and fry it without ghee. Open the vegetable and mix it once and add 1 teaspoon mango powder and 1 teaspoon roasted gram flour to it. After mixing the vegetables, add 1 spoon more gram flour. Cook the vegetable for another 2-3 minutes after adding the gram flour. Delicious gram flour onion and bitter gourd curry is ready.
