Bitter gourd must be eaten in summer. Bitter gourd is made by filling and cutting it. But once you cook bitter gourd with potatoes and eat it. The taste of potato bitter gourd curry is very tasty. Potato bitter gourd vegetable is very spicy and crispy. It can be eaten with dal or with whole paratha. Take a quick note of the recipe of bitter gourd potato curry.
Bitter Gourd Potato Vegetable Recipe
First step- Take half a kilo of bitter gourd and wash them. Now remove the stalk of the bitter gourd and peel the bitter gourd gently. Now cut the bitter gourd lengthwise into two parts. Now cut both the pieces lengthwise once more. If the bitter gourd seeds are too ripe then remove them. However, bitter gourd with seeds tastes better. Now add salt and some turmeric to the bitter gourd and mix. Leave the bitter gourd for 10-15 minutes. Now squeeze the bitter gourd lightly and keep it in another plate.
Second step- Heat mustard oil in a pan and add bitter gourd in it. Now turn the bitter gourd and fry it lightly. Now take 3-4 potatoes, peel them and cut them lengthwise into pieces like bitter gourd. Now wash the potatoes thoroughly 2-3 times. This will remove the starch. When the bitter gourd gets lightly fried, take it out and shallow fry the chopped potatoes in the same oil.
Third step- Keep only 2-3 spoons of the remaining oil in the pan. Add some asafoetida and cumin seeds in oil. Now cut 4 medium sized onions thinly and lengthwise. Separate the onion layers. Now put half the onion in oil and fry it. Now add 1 teaspoon coriander powder, 1 teaspoon red chilli powder and 3-4 green chillies cut from the middle to the onion. Add some turmeric and some salt.
Fourth step-Now soak a lemon-sized tamarind in very little water. After getting wet, mash it with hands, filter this pulp through a sieve and add it to the onion cooking in oil and mix. Now add half spoon garam masala in it. Cook everything for 3-4 minutes and now add the remaining onion to it. Now add fried bitter gourd and potatoes to it. Cook bitter gourd and potatoes on medium flame. Keep stirring it in between.
When everything is melted well, turn off the gas. Delicious potato bitter gourd curry is ready, if you eat it with roti, paratha or rice, you will keep licking your fingers.
