To make jackfruit vegetable, you will have to use these spices given below. With the help of these spices you can prepare very tasty vegetables.

Ingredients for boiling jackfruit: Jackfruit four hundred grams, salt half teaspoon, turmeric powder and water.

Ingredients for gravy base: Mustard oil 2 tablespoons, cumin half teaspoon, onion 3, garlic a handful, ginger 2 inches, green chillies, 2 tomatoes, a handful of green coriander, salt as per taste, water

Ingredients for Tadka: Oil 3-4 tablespoons, half teaspoon cumin, one piece cinnamon, two to three green cardamoms, two to three black cardamoms, two bay leaves, one tablespoon Kashmiri red chilli powder, 1 tablespoon black pepper powder, coriander powder 1 tablespoon, one teaspoon garam masala, roasted kasoori fenugreek, fresh coriander.
Method of making jackfruit curry:

Add oil to the cooker. When the oil is hot, add jackfruit, salt and turmeric powder. Stir for 1-2 minutes then cover the lid and cook till 1 whistle. After cooking, let the steam from the cooker come out on its own.

While the jackfruit is cooking, prepare the gravy base. Roughly chop onion and tomato. Then, add oil and cumin seeds in a pan. After this, add coarsely chopped onions and cook while stirring until it turns golden.

When the onion turns golden, add garlic, ginger, green chillies, tomatoes, coriander stalks. Mix well and turn off the gas when the tomatoes are completely cooked. After it cools down, make a smooth paste of this mixture.

When the steam from the cooker comes out, open the lid. The jackfruit must be ripe well. Heat oil in a pan and fry the jackfruit pieces until they turn golden.

In the same pan, now add cumin seeds, cinnamon, green cardamom, black cardamom, bay leaves and mace and let them crackle. Add the prepared gravy paste and also add salt, turmeric powder, Kashmiri red chilli powder, red hot chilli powder and coriander powder.

Cook them until the spices separate from the oil. When the masala stops sticking to the pan and the oil comes up. Add water to thicken and cook. Now add fried jackfruit pieces. Finally add roasted kasoori methi powder and fresh coriander. Your jackfruit masala curry is ready.
