Ingredients for making Rabdi:

Half cup stale rice, 1 cup makhana, 1 liter milk, 4-5 tablespoons sugar, half teaspoon cardamom powder, 8-10 almonds and pistachios, 1 teaspoon ghee, few threads of saffron.

Method of making Rabdi

  • First step: First of all, heat some ghee in the pan and fry the makhanas until they become slightly crispy. Then grind half the makhanas coarsely and keep the rest whole.

  • second step: Pour milk in a pan and boil it on medium flame. Keep stirring occasionally so that the milk does not stick to the bottom.

  • Third step: Now mash the remaining rice lightly and add it to milk. This will make the texture of rabri creamy.

  • Fourth step: When the milk starts thickening a bit, add both ground and whole makhana to it.

  • Fifth step: Now add sugar, cardamom powder and saffron and cook for 5-7 minutes.

  • Sixth step: Add chopped almonds and pistachios on top and turn off the gas.

  • Seventh step: If the rabri seems too thick then add some hot milk. To enhance the taste, you can also add rose petals or silver work on top.
