Ingredients for papad curry
Onion 1, ginger 1 inch, garlic 3-4, green chillies 2, urad dal papad 4-5, ghee as required, cumin half teaspoon, fennel half teaspoon, coriander half teaspoon, curd 2 cups, turmeric powder half teaspoon, one teaspoon Kashmiri red chilli powder, black pepper powder half teaspoon, coriander powder 1 teaspoon, ghee 2 tablespoons, one dry red chilli, a pinch of asafoetida and kasoori methi, water as required, a handful of green coriander
How to make papad curry
First of all, roughly chop onion, ginger, garlic and green chillies and put them in a chopper and chop them finely. Now, heat the pan and add some ghee. Place papad on it and fry it pressing evenly from all sides until it becomes soft. When they are ready, break them into thick pieces.
Coarsely grind cumin, fennel and coriander seeds in a mortar and pestle. In a bowl add curd, salt, turmeric powder, Kashmiri red chilli powder, coriander powder and garam masala. Beat everything well so that the mixture becomes completely smooth and there are no lumps in it.
Now heat a pan on high flame and add ghee in it. When the ghee becomes hot, add crushed spices, dry red chilli, asafoetida and Kasuri methi. Let them crackle.
After that add the chopped onion mixture and cook while stirring until the onions become light golden brown. When the onions and spices are cooked well, add the spiced curd.
Add water and salt to bring consistency to your liking. Add broken pieces of papad, mix gently and immediately turn off the flame. The papad will gradually absorb the gravy and become a little soft. Add fresh coriander on top and mix well.
Delicious papad curry is ready. You can serve it with roti or rice of your choice.
