Ingredients for Basundi:

Milk – 2 liters (full fat), Saffron – 3-4 strands, sugar a little more than half a cup, Pistachios – 4 (finely chopped), Almonds – 4 (finely chopped), Cashew – 4 (finely chopped), Cardamom powder half a teaspoon.

To serve: Rose syrup, vanilla sponge cake, apple, banana, pomegranate, basundi, pistachios, almonds, rose petals
Recipe to make Basundi

Pour milk in a heavy bottomed pan, keep it on high flame and boil the milk while stirring occasionally. When the milk starts boiling, add saffron strands to it and reduce the flame. Let the milk cook on low flame until it reduces to half.

The milk has to be stirred continuously and the layer of cream should not be allowed to settle on top. After cooking the milk on low flame for 30-35 minutes, add sugar, dry fruits and cardamom powder to it. Mix well, increase the flame slightly and let the basundi cook again for 10 minutes.

Do not cook it till it becomes very thick, the consistency of Basundi is only slightly thick. Therefore, when Basundi is reduced to half, turn off the gas flame. Your sweet Basundi is ready

If you like creamy Basundi then let it cool completely. Once cooled, the cream layer will solidify. You can add it to Basundi or if you want to keep Basundi completely smooth, then you can serve the malai separately.

Garnish with chopped nuts and rose petals. You can also serve it as fruit custard; Simply pour everything into a glass or small cup and refrigerate to chill before serving.
