Material

  • Jackfruit: 250 grams (boiled and cut into large pieces)
  • Basmati rice: 1 cup (boiled till 80%)
  • Curd: 1/2 cup
  • Onion: 2 large (thinly sliced ​​and fried till golden – barista)
  • Ginger-garlic paste: 1 tbsp
  • Tomato: 1 (finely chopped)
  • Spices: 1 bay leaf, 2 small cardamoms, 1 large cardamom, 4-5 cloves, 1 small cinnamon stick
  • Ground spices: 1/2 tsp turmeric, 1 tsp red chilli powder, 1 tbsp biryani masala, salt as per taste
  • Green coriander and mint: 1/2 cup (finely chopped)
  • Ghee/Oil: 3-4 tbsp
  • Saffron/Milk: A pinch of saffron in 2 teaspoons lukewarm milk.

method of making

step 1

Take boiled jackfruit in a big vessel. Add curd, ginger-garlic paste, turmeric, red chilli powder, half the biryani masala, a little salt, a little fried onion and half chopped coriander-mint. Let it marinate for 20 minutes.

Step 2
Heat oil/ghee in a pan or heavy bottomed pan. Add spices to it. When the spices start crackling, add tomatoes and cook until soft. Now add marinated jackfruit to it and fry it on medium flame for 7-8 minutes, so that the spices leave the oil.

Step 3
Once the jackfruit is cooked, reduce the flame. Spread a layer of steamed basmati rice over the jackfruit gravy. Now add remaining fried onion, chopped coriander, mint, remaining biryani masala and add saffron milk and 1 spoon desi ghee over it.

Step 4
Close the vessel tightly with a lid. Let it cook on low flame for 10-12 minutes. After the time is over, turn off the gas and serve it in a plate. Its taste will be even better with raita.
