Ingredients for Himachali Kadhi Pakoda:
Ingredients for Kadhi: For curd mixture, 2 cups curd, 2 cups water, 2 tbsp gram flour, half tsp turmeric powder, half tsp degi red chilli powder, 2-3 tbsp mustard oil, fenugreek seeds, 2-3 nos dry red chilli, 1 tsp cumin, green coriander, crushed coriander seeds, 1 inch ginger, 1 tsp soft green coriander, prepared curd mixture, 1 cup water, salt as per taste, fried Pakodas, 1-2 tsp ghee
Ingredients for Palak Pakoda: 1 small bunch of spinach leaves, 1 tbsp green coriander, crushed coriander seeds, one and a half cup gram flour, 2-3 tbsp curd, half tsp carom seeds, salt as per taste, half tsp asafoetida, half tsp red chilli powder, turmeric powder, water as per need, oil for frying
How to make Himachali Kadhi Pakora?
Step 1: First make the spinach pakodas. In a bowl, add spinach, crushed coriander, gram flour, curd, carom seeds, salt as per taste, asafoetida, degi red chilli powder, turmeric powder, water as per requirement and mix well. Now, heat oil in a pan, drop the pakoras one by one into the oil and fry until they turn golden brown and crispy. Remove it in absorbent paper and keep it aside for further use.
Second Step: Now prepare the curd solution well. Beat 2 cups curd well, then add 2 cups water, 2 tablespoons gram flour, half teaspoon turmeric powder, half teaspoon red chili powder and mix well.
Step 3: Now, add mustard oil in the same pan, when it gets hot, add fenugreek seeds, red chilli, cumin, ginger along with crushed coriander and cook for a minute. Now add prepared curd mixture, water, salt as per taste, mix well and then let it boil for some time.
Step 4: Now, add fried spinach pakodas and cook for another 2-3 minutes or till cooked. Apply ghee to it and mix it well. Take it out in a serving dish, garnish with chilli oil and coriander sprigs. Serve hot with boiled rice.
